Drink it now or cellar for up to 5 years. No need to decant but best to open it an hour before
service. The ancient Piedmontese Paitin winery founded in 1796 produces classic local
wines from native grapes remaining faithful to tradition as evidenced by the grandiose
Barbaresco DOCG Sorì Paitin which for over a century is still the flagship wine. The entire
range of wines is of considerable value demonstrating how the company has been able to carry
on its history with awareness and balance thus maintaining a unique and unreproducible style.
The Nebbiolo d’Alba DOC "Ca Veja '' comes from the vineyard of the same name located between
Neive and Barbaresco at 280-350 meters above sea level. Here the vines are grown with organic
methods and as natural as possible to enhance the variety and the territory. The
wine shows a splendid red color in the glass with brilliant garnet reflections. On the nose
this red wine reveals elegant notes of wild berries violets spices and dark fruit combined
with balsamic and toasted hints. In the mouth it is austere and well-structured with good
freshness and succulent and velvety tannins. The finish is long and persistent. Try it with
Italian Bollito (boiled beef) braised meat dishes based on truffles or porcini mushrooms.
